Simple Chicken Stir-Fry Recipe

I love a good stir-fry! I love how easy and quick it is, as well as how you can pretty much put any meat and vegetable in it and it will probably still end up delicious! As of late, I am partial to using asparagus and mushrooms in my cooking, so I decided to whip up a quick stir-fry with them!


Ingredients:
½ cup quinoa
½ cup brown rice
2 cups water
1lb skinless, boneless chicken breasts, cut into bite sized pieces
1lb asparagus, trimmed and chopped
8 oz sliced mushrooms
1 tbsp honey
1 tsp red pepper flakes
1/4 cup reduced sodium soy sauce
5 garlic cloves, minced
1 lime, juiced
2 tbsp Olive Oil


Directions:
1. In a small bowl, whisk together the soy sauce, garlic, honey, and lime juice. Add the chicken pieces, cover, and marinate at least 3 hours.

2. Put the rice, quinoa, and water together in a pot and bring it to a boil on medium high heat.

3. Once it starts to boil, turn the heat to low and cover, allowing the mixture to simmer until all of the liquid is gone (it usually takes about 20 minutes or so—you may want to start the rice and leave it for about 10 minutes before beginning the other steps).

4. Heat a skillet on medium high heat. Pour 1 tbsp of olive oil in the skillet and allow it to heat through. Add mushrooms and allow them to cook until tender, and then move them to a large bowl or pot (I keep adding to the pot to mix all of the ingredients together).


5. Repeat previous step using asparagus. Heat until they are slightly browned.



6. Pour the chicken and marinade into the skillet. Let the chicken brown evenly on all sides, making sure that the chicken is cooked through.



7. Once the rice and chicken have finished cooking, mix them into the asparagus and mushrooms! J

Caramel deLites (aka Samoas in my day!) Shakeology Recipe

I LOVE Girl Scout cookies! Pretty much ALL of the flavors too! But my favorite is definitely Caramel deLites--that mix of chocolate, caramel, and coconut is just so amazing I can find myself eating an entire box in one sitting. BUT that wouldn't be a healthy choice, would it? So here is what I do to help myself get my fix, without having to eat a box of cookies! Enjoy! :)

Summer in a Glass Shakeology Recipe


Don't you love summer? I know I do!! I think one of the best parts of summer is the fact that my favorite fruit, watermelon, is in season! I LOVE watermelon!!! Lately I've been thinking about how I could combine my vanilla Shakeology with watermelon and I think I have found the perfect combination of flavors!

Ingredients:
1/2 cup watermelon
1/2 cup frozen pineapple
4 oz. almond milk (or 8-12 oz, just don't add water)
8 oz. water
1 scoop vanilla Shakeology
4-6 ice cubes

Put it all in the blender and enjoy, preferably next to a pool! ;)

Lemon Garlic Chicken Pasta


Servings: 4 (1 serving is a cup)
Containers: 1 yellow, ½ red, ¼ green, 2 tsp

Ingredients:
3-4 Chicken breast cut into 1" cubes
8oz whole wheat pasta (I used spaghetti because I already had some)
1 cup loose leaf parsley (fresh and not chopped)
1 cup cherry tomatoes (quartered)
1 clove garlic (grated)
3 tbsp olive oil
1 Lemon
salt/pepper to taste
1 tbsp grated parmesan cheese


Directions:

1. Cook pasta according to directions.

2. In a large sauté pan, pour 1 tbsp of olive oil and heat on medium heat. Once the oil is heated, add the chicken and cook until the pieces are brown on each side.

3. While chicken and pasta are cooking, mix together 2 tbsp of olive oil, garlic, and juice from the lemon.


4. Once chicken has cooked, add the quartered tomatoes, parsley, cooked pasta, salt and pepper, and lemon/garlic sauce. Add about a tbsp. of cheese and serve!

“Snickerdoodle” Shakeology Recipe


Guys, I am not even lying when I say, this shake is AH-mazing. I’ve had it three days in a row now (I added some kale to it today since I was struggling to get veggies in, and it’s still AH-mazing) and I could probably drink it every day! There are so many great Shakeology recipes out there, but I really wanted something that involved a lot of “free” ingredients (spices, extracts, etc.) because, being in the lowest bracket of the 21 Day Fix meal plan, I don’t want to always use up one of my fruits or an extra protein on my shake—a girl’s gotta eat! This is why this Shakeology recipe is AH-mazing!

Here it is:


Put all the ingredients in your blender and enjoy! J

21 Day Fix “Fried” Rice Recipe


I love rice so much! You can pretty much do anything to it and I will love it! Since I’ve started trying to eat healthier, I no longer eat white rice and I usually mix my brown rice with quinoa to try to make it even healthier and it’s amazing.

When I go out to eat, I often love to get Asian food… so fried rice is definitely something I miss! I decided to take the main ingredients and put them together to see if they tasted great and gave me my fix and they did!




(Makes 2 servings)

Ingredients:
2 yellows of brown rice (or 3:1 rice/quinoa blend)
1 red of ground chicken (you can also use chicken breast, but ground chicken is so cheap)
1 red of scrambled eggs
2 green any veggies you want (I use frozen stir-fry veggies)


1. Make the rice according to the directions. If you are using rice and quinoa together, I just throw them in together and cook it according to the rice directions!
2. Brown ground chicken in a pan and prepare the frozen veggies according to the directions.
3. Scramble two eggs.
4. Use your 21 Day Fix containers to portion out everything and mix together on your plate!!!

The great thing about this dish is that you can play around with it! I am in the lowest bracket, so I only get 2 yellows, 4 reds, and 3 greens to work with throughout the day. If you’re in a higher bracket, you could very easily double any part of this to get in one of the containers that you are struggling to get in.

I also like to keep my recipes very simple so that I don’t have to buy a ton of ingredients. But adding something like a chopped green onion, ginger, or garlic can really kick this recipe up a notch! Just remember to play around a little bit with your flavors!
